Chateau Morrisette


Red Wine Poached Fruit


1 Bottle Cabernet
3/4 Cup of sugar
1 orange (zested and Juiced)
2 bay leaves
1 cinnamon stick
5 cloves
2 star anise
1 1/2 cup of water
2 tsp kosher salt
1 tbsp. pepper corns
4-6 fresh pears or apples


Add all ingredients to a small pot and simmer for 5 minutes then add peeled pears or apples. Simmer for 10 more minutes until pears are fork tender.  Fruit should be somewhat soft but not mushy. Poaching liquid may be reduced further to dress the plate.

Fruit may be served alone or with garden salad.
